Duck in honey and mint sauce

Honey and mint blend perfectly. They give poultry meat a delicate aroma and original taste, make it juicy and tender. To bake a duck in this way is quite simple, this dish does not require special culinary abilities and is always good at.

1 duck weighing 2 kg
small bunch of mint
3 teaspoons of honey
50 g butter
1 lemon
salt, freshly ground black pepper

How to cook duck in the oven

Remove the zest from the lemon with a grater. Finely chop the mint 1 tablespoon of mint mixed with 1 teaspoon of honey, half the butter and zest. Salt, pepper.
Pour boiling water over the duck, dry it with paper towels and rub it with salt. Put the resulting mint-honey mixture inside the duck, trying to distribute it evenly. Rub the duck breast with the remaining butter. Place the bird in the duckbill with the breast up and place in the oven preheated to 200 ° C for 1.5 hours.
Finely chop the flesh of the lemon. Put in a saucepan, put on medium heat and cook for 4 minutes. Add honey and sugar to taste, bring to a boil. Put the remaining mint, mix and remove from heat. Cover the sauce and let it brew. Transfer the finished duck to a dish and pour sauce, cover with foil and let stand for 10 minutes. Pour the remaining sauce into the gravy boat and serve to the duck.
