Duck in orange sauce is made with juicy and very soft meat and delicious taste..
Ingredients – 4 Servings
¼ teaspoon salt
Duck fillet (breast) 2 pieces
Ground black pepper to taste
Sugar 3 teaspoons
Dry white wine 175 ml
Oranges 4 pieces
Chicken broth 175 ml
Soy sauce 8 tablespoons
How to cook duck in orange sauce
Salt the fillet, season with pepper and leave to marinate. Gently remove the zest from two oranges (without white pulp). Extract juice from all oranges. Mix juice and zest with chicken stock and wine. Pour the mixture into a deep frying pan, bring to a boil and add sugar. Keep on medium heat until thickened.
Preheat another pan and place the duck fillet skin side down without oil. Fry on one side for about 15 minutes. Then pour fat from the pan and add part of the soy sauce, turn the breasts over and pour the skin of soy sauce on top. Hold the fillet over low heat for 2-3 minutes, turn it off and leave it for 10 minutes.
Remove the fillets from the pan, cut each in half lengthwise, put in a pan with caramelized sauce and warm well. Serve immediately!
