How to cook baked chicken with oranges and ginger
Cut a quarter from one orange and set aside. Peel the rest and the second whole orange and carefully remove all the bitter white films. Cut into circles about half a centimeter thick.
Dry the chicken well and grate it with vegetable oil, coarse salt, red and black pepper on all sides.
Preheat the oven to 200 degrees. Put orange slices in one layer on the bottom of a small deep baking sheet or baking dish. Place the chicken on the oranges, breast down. Put in the oven for 30-40 minutes.
Squeeze the juice from the remaining quarter of the orange into a small deep bowl. Peel the ginger and grate. Mix orange juice with ginger, four tablespoons of honey and add spices to taste – you can throw a pinch of black and red pepper. Mix well.
Remove the chicken from the oven, gently turn the breast up and carefully grease the resulting ginger-orange mixture.
Return the baking sheet with chicken to the oven and bake for about 40 minutes, periodically pouring chicken juice from the baking sheet, the more often this is done, the faster the crust forms – and the meat will be juicier under it.
Cut the prepared chicken with a beautiful golden crust into portions and serve with baked oranges, pouring the juice left after baking the chicken.
Bon Appetit!
