How to make chocolate truffles
Finely chop and melt in a water bath bitter chocolate.
Cream with powdered sugar, bring to 90C
Pour chocolate with hot cream and stir until a homogeneous chocolate cream.
Add vanilla essence and stir the mixture again.
Cover with cling film and chill in the refrigerator for 40-60 minutes.
Dial spoon a little chilled ganache and form small balls.
When all the chocolate balls are ready, the dish with truffle blanks put into the refrigerator for 20 minutes.
On board Sift cocoa - powder and roll the truffles in it.
Store the truffles in the refrigerator in an airtight container.
